Prepare the Beef

Preheat the oven to 400°F (200°C). Season the beef tenderloin with olive oil, minced garlic, salt, and black pepper. Make sure to coat it evenly on all sides.

Sear the Beef

In a large oven-safe skillet over medium-high heat, sear the beef on all sides until browned (about 2-3 minutes per side).

Roast the Beef

Transfer the skillet to the preheated oven and roast for 20-25 minutes for medium-rare, or until desired doneness. Let it rest for 10 minutes before slicing.

Cook the Potatoes

In a large pot, bring salted water to a boil. Add the peeled and cubed blue potatoes. Cook until tender, about 15-20 minutes.

Mash the Potatoes

Drain the potatoes and return them to the pot. Add butter, milk, salt, and pepper. Mash until smooth and creamy.

Sauté the Mushrooms

In a skillet, heat olive oil over medium heat. Add sliced mushrooms and cook until they are browned and soft, about 5-7 minutes.

Stir in minced garlic, fresh thyme, salt, and pepper. Cook for an additional 2-3 minutes until fragrant.
