Fritter Mixture

Method

Preparation

  1. 1

    Prepare the Fritter Mixture

In a large mixing bowl, combine the chopped conch meat, all-purpose flour, cornmeal, diced green bell pepper, diced onion, minced garlic, beaten eggs, milk, baking powder, salt, black pepper, cayenne pepper, and chopped parsley.

  2. 2

    Mix Ingredients

Stir the mixture thoroughly until all ingredients are well combined. The batter should be thick but pourable.

  3. 3

    Heat Oil

In a deep frying pan or pot, heat about 2 inches of oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles, the oil is ready.

  4. 4

    Fry Fritters

Using a spoon or small scoop, carefully drop spoonfuls of the batter into the hot oil. Do not overcrowd the pan; fry in batches if necessary.

  5. 5

    Cook Until Golden

Fry the fritters for about 3-4 minutes on each side or until they are golden brown and cooked through. Remove them with a slotted spoon and place them on paper towels to drain excess oil.

  6. 6

    Serve

Serve the conch fritters hot with a dipping sauce of your choice, such as tartar sauce or a spicy remoulade.
