    In a large pot, melt the unsalted butter over medium heat. Once melted, add the diced onion, celery, and red bell pepper. Sauté for 5-7 minutes until the vegetables are softened and the onion becomes translucent.

    Add Garlic and Herbs

    Stir in the minced garlic, dried thyme, and bay leaf. Cook for an additional 2 minutes until the garlic is fragrant.

    Incorporate Broth and Potatoes

    Gradually pour in the chicken or seafood broth, scraping the bottom of the pot to deglaze. Add the diced potatoes and bring the mixture to a boil. Reduce to a simmer and let cook for 15 minutes or until the potatoes are tender.

    Add Conch Meat

    Once the potatoes are tender, add the fresh conch meat to the pot. Let it cook for about 5-7 minutes until the conch is cooked through.

    Finish with Cream and Seasoning

    Stir in the heavy cream, salt, black pepper (to taste), and lemon juice. Allow the chowder to heat through for another 5 minutes, stirring occasionally.
