Fish

Roasted Red Pepper Sauce

Method

Fish Preparation

  1. 1

    Season the Flounder

Rinse the flounder fillets under cold water and pat dry with paper towels. Drizzle olive oil over the fillets, then sprinkle with salt and black pepper.

  2. 2

    Cook the Flounder

In a large skillet, heat over medium-high heat. Once hot, add the seasoned flounder fillets. Cook for about 3-4 minutes per side or until the fish is opaque and flakes easily with a fork. Remove from heat and keep warm.

Roasted Red Pepper Sauce Preparation

  1. 3

    Blend the Sauce

In a blender, combine the roasted red peppers, garlic cloves, and lemon juice. Blend until smooth.

  2. 4

    Add Cream and Season

Pour the blended mixture into a saucepan over medium heat. Stir in the heavy cream and let it simmer for 5 minutes, stirring occasionally. Add chopped fresh basil and season with salt and pepper to taste.

Plating

  1. 5

    Serve the Dish

Place the cooked flounder on plates and generously spoon the roasted red pepper sauce over the top. Garnish with additional fresh basil if desired.
