    Combine Ingredients

    In a medium saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat over medium heat until the sugar has dissolved, stirring occasionally.

    Whisk Egg Yolks

    In a separate bowl, whisk the egg yolks until they are pale and slightly thickened. Gradually pour in some of the warm milk mixture into the yolks, whisking constantly to temper the eggs.

    Cook the Mixture

    Pour the egg yolk mixture back into the saucepan with the remaining milk and cream. Cook over low heat, stirring constantly until the mixture thickens and coats the back of a spoon, about 10 minutes.

    Add Flavor

    Remove the saucepan from the heat and stir in the vanilla extract and your chosen seasonal flavor ingredient. If using fruit, you may want to blend it into a puree before adding.

    Chill the Mixture

    Let the mixture cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.

    Churn

    Once chilled, churn the mixture in an ice cream maker according to the manufacturer's instructions until it reaches a soft-serve consistency.

    Freeze

    Transfer the gelato to a lidded container and freeze for at least 2 hours to firm up before serving.
