Preparation

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare the Vegetables

    Wash and slice the zucchini, bell pepper, and carrot. Chop the mushrooms and spinach.

    Sauté the Vegetables

    In a large skillet, heat a tablespoon of olive oil over medium heat. Add the zucchini, bell pepper, mushrooms, carrot, and spinach. Sauté for about 5-7 minutes until softened. Season with salt and pepper to taste.

    Mix the Cheese Filling

    In a bowl, combine ricotta cheese, egg, salt, black pepper, and Italian seasoning. Mix until smooth.

Assembly

    Layer the Ingredients

    In a baking dish, spread a thin layer of marinara sauce on the bottom. Place 3 lasagna noodles on top. Spread half of the ricotta mixture over the noodles, followed by half of the sautéed vegetables, and a layer of mozzarella cheese. Repeat the layers with 3 more noodles, the remaining ricotta mixture, the remaining vegetables, and another layer of mozzarella.

    Final Layer

    Top with the last 3 lasagna noodles, remaining marinara sauce, and the remaining mozzarella cheese. Sprinkle Parmesan cheese on top.

Baking

    Cover and Bake

    Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.

    Uncover and Brown

    Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

    Cool and Serve

    Remove from the oven and let it cool for about 10 minutes before slicing. Serve warm.
