Seafood Stuffing

Prepare the Base
In a large skillet, melt the butter over medium heat. Add the chopped onion and celery, and sauté until soft, about 5 minutes.

Add Garlic and Seafood
Stir in the minced garlic and cook for an additional minute. Then, add the shrimp and crab meat, mixing well.

Prepare Haddock

Preheat Oven
Preheat your oven to 375°F (190°C).

Stuff the Fillets
Take a generous amount of the seafood stuffing and place it on one end of each haddock fillet. Roll the fillet over the stuffing to enclose it. Secure with toothpicks if necessary.
Bake Haddock
Newburg Sauce

Add Milk and Cream
Gradually whisk in the milk and heavy cream, cooking until the sauce thickens, about 5 minutes.

Finish the Sauce
Remove the saucepan from heat. In a small bowl, whisk the egg yolks and sherry together, then slowly add to the sauce while stirring continuously. Season with salt and cayenne pepper.
Serve

Plate the Dish
Once the haddock is done baking, carefully remove it from the oven and serve with the Newburg sauce drizzled on top.
