Burger Patty Preparation

    Cook Sweet Potato

    Preheat your oven to 400°F (200°C). Prick the sweet potato with a fork a few times and bake for about 45 minutes, until tender. Let it cool, then peel and mash it.

    Prepare Black Beans

    In a large mixing bowl, mash the black beans with a fork or a potato masher until mostly smooth with some chunks remaining for texture.

    Mix Ingredients

    Add the mashed sweet potato, oats, chopped onion, minced garlic, cumin, paprika, salt, and pepper to the mashed black beans. Mix until well combined.

    Form Patties

    Divide the mixture into 4 equal portions and shape each into a patty.

    Cook Patties

    In a skillet, heat olive oil over medium heat. Cook each patty for about 5-6 minutes on each side, until golden brown.

Sweet Potato Fries Preparation

    Cut Sweet Potatoes

    Peel and cut the sweet potatoes into thin strips or wedges.

    Season Fries

    In a bowl, toss the sweet potato strips with olive oil, salt, paprika, and black pepper until evenly coated.

    Spread the fries in a single layer on a baking sheet. Bake in the preheated oven (400°F/200°C) for about 25-30 minutes, flipping halfway through, until crispy and golden.

Burger Assembly

    Prepare Buns

    Slice the whole grain burger buns in half and toast them if desired.

    Assemble Burger

    Spread vegan mayo on the bottom half of each bun. Place a lettuce leaf, followed by a burger patty, slices of tomato, and avocado. Top with the other half of the bun.
