Soup Preparation

  1. 1

    Prepare the Vegetables

Chop the fresh tomatoes, onion, and garlic. Set aside.

  2. 2

    Sauté the Onion and Garlic

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent. Then add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

  3. 3

    Add the Tomatoes

Stir in the chopped tomatoes to the pot and cook for about 5-7 minutes until they start to break down.

  4. 4

    Pour in the Broth

Add the vegetable broth to the pot, followed by salt, black pepper, sugar, and basil leaves. Bring the mixture to a boil.

  5. 5

    Simmer the Soup

Reduce the heat and let the soup simmer for 20-25 minutes, stirring occasionally.

  6. 6

    Blend the Soup

Using an immersion blender, blend the soup until smooth. Alternatively, you can carefully transfer the soup to a blender in batches.

  7. 7

    Adjust Seasoning

Taste the soup and adjust seasoning if necessary, adding more salt, pepper, or sugar to taste.

Serving

  1. 8

    Prepare the Bread

Slice the crusty bread and serve it alongside the hot tomato soup.
