Preparation of Main Ingredients

    Toast the English Muffins

    Split the English muffins in half and toast them until golden brown.

    Cook the Ham

    In a skillet over medium heat, cook the Canadian bacon or ham for about 2-3 minutes on each side until warmed through.

    Melt the Cheese

    Place a slice of Swiss cheese on top of each slice of ham and cover the skillet with a lid to melt the cheese, about 1-2 minutes.

Hollandaise Sauce Preparation

    Prepare the Double Boiler

    In a saucepan, bring about an inch of water to a simmer. Place a heatproof bowl on top, ensuring it does not touch the water.

    Whisk Egg Yolks

    In the bowl, whisk together the egg yolks, lemon juice, and Dijon mustard until the mixture is pale and slightly thickened.

    Add Butter

    Slowly drizzle in the melted butter while continuously whisking until the sauce is thick and creamy. If the sauce is too thick, add a teaspoon of warm water to thin it out.

    Season the Sauce

    Season the Hollandaise with salt and a pinch of cayenne pepper. Whisk to combine.

Assembly

    Assemble the Benny

    Top each toasted English muffin half with a slice of ham and melted Swiss cheese. Drizzle with the prepared Hollandaise sauce.
