Steak Preparation

    Season the Steak

    Take the ribeye steaks and pat them dry with a paper towel. Sprinkle both sides generously with salt and black pepper. Let them sit at room temperature for about 30 minutes.

    Heat the Pan

    In a large skillet, heat the olive oil over medium-high heat until shimmering but not smoking.

    Cook the Steak

    Add the seasoned steaks to the skillet. Cook for 4-5 minutes on each side for medium-rare, depending on thickness. In the last minute of cooking, add butter, garlic cloves, and thyme to the pan, basting the steaks with the melted butter.

    Rest the Steak

    Once cooked to your liking, remove the steaks from the skillet and let them rest on a cutting board, loosely covered with foil, for about 5 minutes.

Homemade Chips Preparation

    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

    Dry the Potatoes

    Drain the soaked potatoes and pat them dry with a clean kitchen towel.

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Chips

    Carefully add the dried potato strips to the hot oil in batches, frying for about 4-5 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

    Season the Chips

    Sprinkle the hot chips with salt immediately after frying.
