For the Pie Filling

    Sear the Beef

    In a large skillet, heat the olive oil over medium-high heat. Add the diced beef and sear until browned on all sides, about 5-7 minutes. Remove the beef from the skillet and set aside.

    Cook the Vegetables

    In the same skillet, add the chopped onion, diced carrots, and sliced mushrooms. Sauté until the vegetables are soft, about 5 minutes. Add the minced garlic and cook for an additional 1 minute.

    Combine Ingredients

    Return the beef to the skillet. Add the beef broth, ale, Worcestershire sauce, dried thyme, salt, and black pepper. Bring to a boil, then reduce heat and let simmer for about 1 hour, until the beef is tender.

    Thicken the Filling

    In a small bowl, mix cornstarch and water together to form a slurry. Gradually stir the slurry into the beef mixture and cook until thickened, about 5 minutes. Remove from heat and let cool slightly.

    Prepare the Crust

    In a large bowl, mix the all-purpose flour and salt. Add the chilled cubed butter and mix until the mixture resembles coarse crumbs.

    Form the Dough

    Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Assemble and Bake the Pie

    Preheat your oven to 400°F (200°C).

    Roll Out the Dough

    On a floured surface, roll out one disk of dough to fit your pie dish. Transfer the rolled dough into the pie dish and add the cooled beef filling.

    Roll out the second disk of dough and place it over the filling. Seal the edges by crimping with a fork, and cut a few slits in the top to allow steam to escape.
