Method
Preparing Chicken Tenders
- 1
Prepare the Chicken
In a large bowl, combine the flour, cornstarch, salt, black pepper, garlic powder, onion powder, and paprika. Mix well.
- 2
Batter the Chicken
In a separate bowl, whisk together the eggs and buttermilk. Dip each chicken tender into the egg mixture, then coat thoroughly in the flour mixture. Set aside on a baking sheet.
- 3
Fry the Chicken
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat. Once hot, fry the chicken tenders in batches until golden brown and cooked through, about 5-7 minutes per side. Drain on paper towels.
Making Hot Wing Sauce
- 4
Melt Butter
In a small saucepan over medium heat, melt the butter. Add the hot sauce, garlic powder, cayenne pepper, and honey. Stir to combine and heat through until warm.
- 5
Coat the Chicken
Once the chicken tenders are cooked, place them in a large bowl and pour the hot wing sauce over them. Toss to coat evenly.
Preparing Bleu Cheese Dressing
- 6
Mix the Dressing
In a medium bowl, combine mayonnaise, sour cream, bleu cheese crumbles, lemon juice, garlic powder, salt, and black pepper. Mix well until smooth and creamy.
- 7
Adjust Seasoning
Taste the dressing and adjust seasoning with additional salt and pepper as needed.
Serving
- 8
Plate and Serve
Serve the spicy buffalo chicken tenders on a platter with the bleu cheese dressing on the side for dipping.
