Soup Preparation

    Sauté the Vegetables

    In a large pot, heat olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

    Add Garlic and Tomatoes

    Stir in the minced garlic and continue to sauté for another minute until fragrant. Then, add the diced tomatoes with their juices to the pot.

    Combine Broth and Seasonings

    Pour in the vegetable broth and add bay leaves, dried thyme, and season with salt and black pepper to taste. Bring the mixture to a boil.

    Simmer the Soup

    Once boiling, reduce the heat to low and let the soup simmer for about 20-25 minutes, allowing the flavors to meld together.

    Finish and Garnish

    Remove the bay leaves from the soup. Stir in the chopped fresh parsley and lemon juice just before serving.
