In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the chuck roast with salt and black pepper. Once the oil is hot, sear the roast on all sides until browned (about 4-5 minutes per side).

Transfer the seared roast to a slow cooker. Add the chopped onion, carrots, celery, minced garlic, bay leaves, and beef broth. Cover and cook on low for 8 hours or until the meat is tender and shreds easily.

Once cooked, remove the roast from the slow cooker and let it rest for 10 minutes. Use two forks to shred the meat into bite-sized pieces and set aside.

While the meat is resting, slice the sandwich rolls in half horizontally. Optionally, you can toast the rolls lightly under the broiler for added texture.
