Preparation

Prepare the Seafood
Rinse the haddock, shrimp, clams, and scallops under cold water and pat them dry with paper towels. Set aside.

Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. In another bowl, whisk together the eggs and milk. Gradually add the wet ingredients to the dry ingredients, mixing until smooth.

Heat the Oil
In a large, deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

Fry the Haddock
Dip each haddock fillet into the batter, ensuring it's fully coated, then carefully place it in the hot oil. Fry for 4-5 minutes on each side or until golden brown and cooked through. Remove and place on a paper towel-lined plate.

Fry the Shrimp
Dip the shrimp into the batter and gently place them in the oil. Fry for about 2-3 minutes until they turn pink and are crispy. Remove and drain on paper towels.

Fry the Clams
Coat the clams in the batter and fry in the hot oil for about 3-4 minutes until golden brown. Remove and let drain on paper towels.

Fry the Scallops
Dip the scallops in the batter and fry for about 2-3 minutes until golden brown and cooked through. Remove and drain on paper towels.
Serving

Plate the Seafood
Arrange the fried haddock, shrimp, clams, and scallops on a large serving platter.
