    Prepare the Seafood

    Rinse the shrimp and squid under cold water and pat them dry with paper towels. Set them aside.

Batter Preparation

    Make the Batter

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Gradually whisk in the cold water until the batter is smooth and has a thick consistency.

Frying

    Heat the Oil

    In a large, deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F). You can test the temperature by dropping a small amount of batter into the oil; it should sizzle immediately.

    Fry the Shrimp and Squid

    Dip the shrimp and squid rings into the batter, allowing any excess to drip off. Carefully place them in the hot oil, being sure not to overcrowd the pan. Fry them for about 3-4 minutes or until they are golden brown and crispy. Use a slotted spoon to remove them from the oil and place them on paper towels to drain excess oil.

    Arrange the fried shrimp and squid on a serving platter. Garnish with lemon wedges and serve with tartar sauce for dipping.
