Method

Preparation

  1. 1

    Prep the Scallops

Rinse the scallops under cold water and pat them dry with paper towels. This helps to ensure they sear properly.

  2. 2

    Mince the Garlic

Peel and finely mince the garlic cloves.

  3. 3

    Prepare the Lemon

Cut the lemon in half and juice one half, reserving the other half for garnish.

  4. 4

    Chop the Parsley

Finely chop the fresh parsley and set aside for garnish.

Cooking

  1. 5

    Heat the Pan

In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat.

  2. 6

    Season the Scallops

In a bowl, season the scallops with salt, black pepper, and paprika. Toss to coat evenly.

  3. 7

    Cook the Scallops

Once the oil is hot, add the scallops to the skillet in a single layer. Cook for about 2 minutes on one side until golden brown.

  4. 8

    Flip and Add Garlic

Flip the scallops carefully and add the minced garlic to the pan. Cook for another 2-3 minutes until the scallops are opaque and cooked through.

  5. 9

    Finish with Butter and Lemon

Add the remaining tablespoon of butter and the lemon juice to the pan, swirling to combine. Cook for an additional minute.

Serving

  1. 10

    Plate the Scallops

Remove the scallops from the heat and transfer them to a serving plate.

  2. 11

    Garnish

Sprinkle the chopped parsley over the scallops and serve with lemon wedges on the side.
