Cook the Meat
In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Once hot, add the sliced ribeye or chicken. Season with salt and black pepper. Cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.

Sauté the Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onions and bell peppers. Sauté until they are softened and slightly caramelized, about 5-6 minutes.

Combine Meat and Vegetables
Return the cooked meat to the skillet with the sautéed vegetables. Mix them together and heat for an additional 2-3 minutes.

Add Cheese
Place the slices of provolone cheese on top of the meat and vegetable mixture. Cover the skillet and let it cook for 2-3 minutes, or until the cheese is melted.

Prepare the Sandwiches
Slice the hoagie rolls open and fill them generously with the meat and vegetable mixture. Serve immediately.
