Cook Pasta

    Boil Water

    In a large pot, bring salted water to a boil.

    Cook Pasta

    Add 8 cups of pasta to the boiling water and cook according to package instructions until al dente. Drain and set aside.

Prepare Vegetables

    Chop Vegetables

    While the pasta is cooking, chop 1 cup of bell pepper, 1 cup of zucchini, 1 cup of carrot, 1 cup of cherry tomatoes, and 1 cup of broccoli florets into bite-sized pieces.

Make Sauce

    Sauté Garlic

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 3 minced garlic cloves and sauté for 1-2 minutes until fragrant.

    Add Vegetables

    Add the prepared vegetables to the skillet and sauté for about 5-7 minutes until they are tender but still crisp.

    Add Broth and Season

    Pour in 1 cup of vegetable broth, and season with 1 teaspoon each of salt and black pepper. Stir well and let simmer for 3-4 minutes.

    Combine Pasta and Sauce

    Add the cooked pasta to the skillet and toss everything together. Cook for an additional 2-3 minutes to allow the pasta to absorb the flavors.

    Serve

    Remove from heat, sprinkle 1 cup of grated Parmesan cheese over the dish, and toss gently before serving.
