    Prepare the Ingredients

    Start by gathering all the ingredients. Rinse the beef liver under cold water and pat dry with paper towels. Cut the liver into 1/2-inch thick slices. Peel and slice the onion into thin rings. Cut the bacon into small pieces.

Cooking

    Cook the Bacon

    In a large skillet over medium heat, add the bacon pieces. Cook until crispy, about 5-7 minutes. Remove the bacon from the skillet and set aside, leaving the bacon fat in the skillet.

    Sauté the Onions

    In the same skillet with the bacon fat, add the sliced onions. Sauté for about 5-7 minutes until they are softened and slightly caramelized. Remove the onions from the skillet and set aside with the bacon.

    Cook the Liver

    Add olive oil to the skillet if needed. Season the liver slices with salt, black pepper, and garlic powder. Increase the heat to medium-high. In the hot skillet, add the liver slices and cook for about 3-4 minutes on each side, or until they are browned and cooked through but still tender.

    Combine & Serve

    Once the liver is cooked, return the bacon and onions to the skillet. Stir to combine and heat through for an additional minute. Serve warm.
