    Prepare the Gravy

    In a medium saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 2 minutes until it forms a roux (it should be a light golden color).

    Add Broth

    Gradually add the chicken or turkey broth while continuously whisking to avoid lumps. Bring the mixture to a simmer.

    Season the Gravy

    Add salt, black pepper, dried thyme, and garlic powder to the gravy. Allow to simmer for about 5-7 minutes until thickened. Stir occasionally and adjust seasoning to taste.

Assembling the Sandwich

    Toast the Bread

    While the gravy is simmering, toast the sourdough bread slices until golden brown.

    Layer the Turkey

    On two slices of the toasted bread, layer the shredded turkey evenly.

    Add Gravy

    Spoon a generous amount of the prepared gravy over the turkey on each sandwich.

    Top with Remaining Bread

    Place the other two slices of toasted bread on top of the gravy-covered turkey to complete the sandwiches.
