Slice the Onions
Peel the large onions and slice them into 1/2 inch thick rings. Separate the rings and set aside.

Prepare the Batter
In a mixing bowl, combine the all-purpose flour, baking powder, paprika, salt, and black pepper. Mix well.

Dip the Onions
Pour the buttermilk into a shallow dish. Dip each onion ring into the buttermilk, making sure it's fully coated, then dredge it in the flour mixture. Shake off any excess flour.

Coat with Cornmeal and Breadcrumbs
In another bowl, combine the cornmeal and panko breadcrumbs. After dipping in the flour mixture, coat each onion ring in the cornmeal and breadcrumb mixture, pressing gently to adhere.
Frying

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Drain and Serve
Use a slotted spoon to remove the fried onion rings from the oil and drain them on paper towels. Season with additional salt if desired and serve hot.
