Prepare the Battering Mixture
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and slightly thick.

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil to 350°F (175°C). Use enough oil to fully submerge the haddock filets.

Coat the Haddock
Dip each haddock filet into the batter, ensuring it is fully coated. Allow any excess batter to drip off.

Fry the Haddock
Carefully place the battered haddock filets into the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and let drain on paper towels.

Assemble the Sandwich
On the bottom half of each bun, place a fried haddock filet. Top with a slice of American cheese, followed by shredded lettuce and slices of tomato. Place the top half of the bun over the toppings.

Serve the haddock sandwiches immediately while hot with your favorite dipping sauce or side.
