Method
Preparing the Chicken
- 1
Marinate the Chicken
In a bowl, mix olive oil, salt, black pepper, garlic powder, and paprika. Coat the chicken breasts with the marinade and let them sit for at least 30 minutes.
- 2
Preheat the Grill
Preheat your grill to medium-high heat, ensuring it's hot enough to create a good sear on the chicken.
- 3
Grill the Chicken
Place the marinated chicken breasts on the grill. Cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
Preparing the Vegetables
- 4
Chop the Vegetables
While the chicken is marinating, chop the zucchini, bell pepper, and carrot into bite-sized pieces.
- 5
Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add the chopped vegetables, season with salt and black pepper, and sauté for about 5-7 minutes until they are tender but still crisp.
Serving the Dish
- 6
Plate the Chicken and Vegetables
Once the chicken is cooked, remove it from the grill and let it rest for a few minutes. Slice the chicken and serve it alongside the sautéed vegetables.
