Fries Preparation

Cut the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips to resemble fries.

Soak the Fries
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

Dry the Fries
Drain the soaked fries and pat them dry with paper towels.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the fries to the hot oil, working in batches to avoid overcrowding. Fry until golden brown and crispy, about 5-6 minutes per batch.

Drain and Season
Remove the fries from the oil and let them drain on paper towels. Immediately sprinkle with salt to taste.

Melt the Butter
In a saucepan over medium heat, melt the unsalted butter.

Make the Roux
Add the all-purpose flour to the melted butter and whisk continuously for about 2 minutes until it forms a paste and turns slightly golden.

Add Broth
Gradually pour in the beef or chicken broth while continually whisking to prevent lumps.

Season the Gravy
Stir in the soy sauce and black pepper. Bring the gravy to a simmer, allowing it to thicken for about 5-7 minutes.

Assemble the Dish
Place a generous portion of fries in a serving basket or plate.

Ladle the hot gravy over the fries until well covered.

Sprinkle cheese curds generously over the top of the gravy-covered fries.
