Preparing Home Fries

    Cook the Potatoes

    Begin by peeling and dicing the potatoes into small cubes. Place them in a pot of salted water and bring to a boil. Cook for about 5-7 minutes until just tender. Drain and set aside.

    Sauté the Onions

    In a large skillet, heat the olive oil over medium heat. Add the diced onions and sauté until translucent, about 3-4 minutes.

    Fry the Potatoes

    Add the cooked potatoes to the skillet with the onions. Sprinkle with paprika, garlic powder, salt, and pepper. Cook for about 10-15 minutes, stirring occasionally, until the potatoes are golden and crispy.

    Toast the English Muffins

    Slice the English muffins in half and toast them until golden brown.

    Prepare the Ham

    While the muffins are toasting, heat the sliced ham in a separate skillet over medium heat until warmed through, about 2-3 minutes.

    Fill a large saucepan with water and bring it to a gentle simmer. Crack each egg into a small bowl, then gently slide the egg into the simmering water. Poach for about 3-4 minutes for a soft yolk, or longer if desired. Remove with a slotted spoon and drain on a paper towel.

    On each toasted English muffin half, layer a slice of ham followed by a poached egg. Drizzle with hollandaise sauce and season with salt and pepper to taste.
