Biscuit Base

Prepare the Biscuit Dough
In a bowl, mix together the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk until just combined.

Shape and Grill
Turn the dough out onto a floured surface, and knead gently. Pat into a large round about 1 inch thick. Cut into rounds and grill on medium heat until golden brown on both sides.

Poach the Eggs
In a pot of simmering water, add vinegar. Crack the eggs into a small bowl, then gently slide them into the water. Poach for about 3-4 minutes until the whites are set but yolks remain runny.
Hollandaise Sauce

Make the Hollandaise Sauce
In a heatproof bowl, whisk together egg yolks and lemon juice. Place over a pot of simmering water, whisking constantly until the mixture thickens. Gradually add melted butter while whisking until smooth. Season with salt and cayenne pepper.

Cook the Home Fries
In a large skillet, heat olive oil over medium heat. Add the diced potatoes, season with salt and pepper, and cook until crispy and golden, stirring occasionally.
Assembly

Assemble the Dish
To serve, place a grilled biscuit on a plate, top with corned beef hash, and then add two poached eggs on top. Drizzle with hollandaise sauce and serve with a side of home fries.
