Calamari

Method

Calamari Preparation

  1. 1

    Prepare Calamari

Rinse the calamari rings under cold water and pat them dry with paper towels.

  2. 2

    Mix Dry Ingredients

In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika.

  3. 3

    Prepare Wet Mixture

In another bowl, whisk together the egg and milk until well combined.

  4. 4

    Coat Calamari

Dip each calamari ring first in the wet mixture, allowing excess to drip off, then coat in the dry mixture.

  5. 5

    Heat Oil

In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  6. 6

    Fry Calamari

Carefully add the coated calamari rings to the hot oil in batches. Fry for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Aioli Preparation

  1. 7

    Prepare Ingredients

    Mince the garlic cloves finely.

  2. 8

    Mix Aioli

In a medium bowl, combine the mayonnaise, minced garlic, lemon juice, salt, and black pepper. Mix until well blended.

  3. 9

    Chill Aioli

Cover the aioli and refrigerate for at least 30 minutes to allow the flavors to meld.
