Melt the Chocolate
Chop the dark chocolate into small pieces and place it in a heatproof bowl. Add the unsalted butter to the bowl. Melt the chocolate and butter together over a double boiler, stirring frequently until smooth. Remove from heat and let cool slightly.

Prepare Egg Mixture
In a separate bowl, whisk the egg yolks and granulated sugar together until the mixture is pale and slightly thickened.

Combine Mixtures
Slowly add the melted chocolate mixture to the egg yolk mixture, stirring continuously until well combined. Stir in the vanilla extract.

Whip the Cream
In a clean bowl, whip the 300 ml of heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture in three additions, being careful not to deflate the cream.

Chill the Mousse
Spoon the mousse into serving dishes or glasses and refrigerate for at least 2 hours, until set.

Whip the Cream
In a mixing bowl, combine the 150 ml of heavy cream, powdered sugar, and vanilla extract. Whip the mixture until stiff peaks form.

Serve the Mousse
Once the mousse has set, remove it from the refrigerator. Top the chocolate mousse with the prepared whipped cream before serving.
