Preparation

    Preheat the Oven

    Preheat your oven to 200°C (400°F).

    Melt the Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water (double boiler method), stirring until smooth. Remove from heat and let cool slightly.

    Whisk Eggs and Sugar

    In a separate bowl, whisk together the granulated sugar and eggs until the mixture is pale and fluffy. This should take about 5 minutes.

    Combine Mixtures

    Pour the melted chocolate mixture into the egg and sugar mixture. Add the vanilla extract and a pinch of salt. Gently fold together until well combined.

    Add Flour

    Sift in the all-purpose flour and gently fold until just incorporated. Be careful not to overmix.

    Prepare Ramekins

    Grease four small ramekins with butter and dust with flour to prevent sticking.

    Fill Ramekins

    Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

Baking

    Bake the Fondants

    Place the ramekins in the preheated oven and bake for 12-14 minutes. The edges should be set, but the center should still be soft.

    Cool and Serve

    Remove from the oven and let cool for 1 minute. Carefully invert each ramekin onto a plate, allowing the fondant to release. Dust with powdered sugar and serve with fresh berries and vanilla ice cream, if desired.
