Method
Preparation
- 1
Prepare the Chicken
Preheat your oven to 375°F (190°C). Take the chicken breasts and place them between two sheets of plastic wrap. Use a meat mallet or rolling pin to pound them to an even thickness, about 1/2 inch thick.
- 2
Season the Chicken
Season both sides of the chicken breasts with salt and black pepper.
Breading the Chicken
- 3
Set Up Breading Station
In three separate shallow dishes, place the flour, beaten eggs, and breadcrumbs respectively.
- 4
Bread the Chicken
Dredge each chicken breast in the flour, shaking off the excess. Dip into the beaten eggs, and then coat with breadcrumbs, pressing gently to ensure the breadcrumbs adhere.
Cooking
- 5
Fry the Chicken
In a large skillet, heat the olive oil over medium heat. Once hot, add the breaded chicken breasts and cook for about 4-5 minutes on each side, or until golden brown. Remove from the skillet and place on a paper towel to drain excess oil.
- 6
Assemble the Dish
In a baking dish, spread half of the marinara sauce. Place the fried chicken breasts on top. Pour the remaining marinara sauce over the chicken and sprinkle with mozzarella and Parmesan cheese.
- 7
Bake
Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.
- 8
Garnish and Serve
Remove from the oven and sprinkle with fresh basil leaves before serving. Enjoy your Chicken Parmesan!
