Calamari Preparation

    Prepare the Calamari

    Rinse the calamari rings under cold water and pat them dry with a paper towel.

    Make the Breading

    In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well.

    Prepare the Wet Mixture

    In another bowl, whisk together the egg and buttermilk until well combined.

    Coat the Calamari

    Dip each calamari ring into the wet mixture first, then dredge in the flour mixture until evenly coated.

Frying

    Heat the Oil

    In a deep skillet or fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Calamari

    Working in batches, carefully add the coated calamari rings to the hot oil. Fry for 2-3 minutes or until golden brown and crispy.

    Drain the Calamari

    Remove the fried calamari with a slotted spoon and transfer to a paper towel-lined plate to drain excess oil.

Spicy Aioli Preparation

    Mix the Aioli

    In a small bowl, combine the mayonnaise, sriracha sauce, lemon juice, minced garlic, and salt. Stir until well blended.

Serving

    Serve the Dish

    Serve the fried calamari hot with lemon wedges and spicy aioli on the side for dipping.
