    Chop Vegetables

    Dice the onion and bell pepper into small pieces.

    Cook the Meat

    If using bacon or sausage, cook in a skillet over medium heat until fully cooked. Drain and set aside.

Egg Mixture

    Whisk Eggs

    In a bowl, crack the eggs and whisk them until well combined. Add a pinch of salt and pepper to taste.

    Sauté Vegetables

    In the same skillet used for the meat, add the diced onions and bell peppers. Sauté for 3-4 minutes until they are softened.

    Add Eggs

    Pour the whisked eggs into the skillet with the vegetables. Cook on medium heat, stirring gently until the eggs are fully cooked.

    Add Cheese and Meat

    Stir in the cheddar cheese and cooked meat (ham, bacon, or sausage) into the egg mixture until the cheese is melted.

Assembly

    Fill Tortillas

    Lay a flour tortilla flat on a plate. Spoon the egg mixture into the center of the tortilla.

    Roll Burrito

    Fold in the sides of the tortilla and roll from the bottom up to enclose the filling. Repeat with the second tortilla.

Serving

    Serve

    Slice the burritos in half and serve with salsa and sour cream on the side.
