Preparing the Battered Fish

Prepare the Batter
In a large bowl, mix together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and slightly thick.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Fish
Dip each fish fillet into the batter, ensuring it is fully coated.

Fry the Fish
Carefully place the battered fish fillets in the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Potatoes
Peel the large potatoes and cut them into thick slices or wedges.

In a separate pot, heat the vegetable oil over medium-high heat. Add the potato slices in batches, frying for about 5-7 minutes until golden brown. Remove and drain on paper towels, then sprinkle with salt.

In a small bowl, combine the mayonnaise, finely chopped dill pickles, capers, lemon juice, and chopped parsley. Mix well.

Add salt and black pepper to taste, adjusting according to your preference.
