Bagel Preparation

Prepare the Yeast
In a small bowl, combine warm water (1.5 cups) and sugar (2 tbs). Sprinkle the active dry yeast (2 tbs) over the top and let it sit for about 5-10 minutes until frothy.

Make the Dough
In a large mixing bowl, combine all-purpose flour (4 cups) and salt (1 tsp). Once the yeast mixture is frothy, pour it into the flour mixture. Mix until a dough begins to form.

Knead the Dough
Turn the dough out onto a lightly floured surface and knead for about 10 minutes until smooth and elastic. Form the dough into a ball.

First Rise
Place the dough in a greased bowl, cover it with a clean cloth, and let it rise in a warm place for about 1 hour or until it has doubled in size.

Shape the Bagels
Once risen, punch down the dough and divide it into 8 equal pieces. Roll each piece into a ball, then poke a hole in the center with your finger and stretch it to form a bagel shape.

Boil the Bagels
Bring a large pot of water to a boil, adding honey (2 tbs). Boil each bagel for about 1 minute on each side. Remove and place on a baking sheet.

Bake the Bagels
Preheat the oven to 425°F (220°C). Bake the bagels for 20-25 minutes or until golden brown.
Cream Cheese Spread Preparation

Mix the Spread
In a mixing bowl, combine softened cream cheese (8 oz), softened butter (2 tbs), garlic powder (1 tsp), chopped chives (2 tbs), salt (1 tsp), and black pepper (0.5 tsp).

Blend Until Smooth
Use a hand mixer or a fork to blend all the ingredients together until smooth and creamy.

Chill and Serve
Transfer the cream cheese spread to a serving bowl and chill in the fridge for at least 30 minutes before serving with the warm bagels.
