    Chop the Vegetables

    Start by washing all the vegetables thoroughly. Then, chop the onion, bell pepper, tomato, mushrooms, and jalapeños into small pieces. Cut the broccoli into bite-sized florets. Set all chopped vegetables aside.

    Prepare Spinach

    Rinse the spinach leaves under cold water and pat them dry with a kitchen towel. Remove any tough stems.

    Slice the Olives

    If using whole black olives, slice them into rings or halves for better distribution in the dish.

Cooking

    Sauté the Onions and Peppers

    In a large skillet over medium heat, add a splash of oil. Once hot, add the chopped onion and bell pepper. Sauté for about 3-4 minutes until they begin to soften.

    Add Remaining Vegetables

    Add the chopped mushrooms and broccoli florets to the skillet, cooking for an additional 5 minutes. Stir occasionally to prevent sticking.

    Incorporate Spinach and Tomatoes

    Add the spinach and chopped tomatoes to the skillet. Cook for another 2-3 minutes until the spinach wilts and tomatoes soften.

    Add sliced black olives and jalapeños according to your taste. Stir everything to combine and let it cook for an additional minute. Remove from heat and serve warm.
