Prepare the Sushi Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it cool slightly.

Season the Rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice using a wooden spatula. Allow the rice to cool to room temperature.

Roll the Sushi
Place a bamboo sushi mat on a flat surface. Lay a sheet of nori on the mat, shiny side down. Wet your hands to prevent sticking, then grab a handful of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top. Place slices of cucumber, avocado, and crab sticks across the center of the rice.

Form the Roll
Using the bamboo mat, carefully lift the edge of the mat closest to you and start rolling away from you while applying gentle pressure to create a tight roll. Roll until you reach the border of the nori. Use a little water to seal the edge of the nori.

Slice the Roll
Using a sharp knife, wet the blade to prevent sticking, and slice the roll into bite-sized pieces.

Serve
Arrange the sushi rolls on a platter and serve with soy sauce, wasabi, and pickled ginger.
