Prepare the Sushi Rice

Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it steam for 10 minutes.

Season the Rice

In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm rice, being careful not to mash the grains. Allow the rice to cool to room temperature.

Prepare the Fillings

Slice the fresh fish, avocado, and cucumber into thin strips.

Assemble the Sushi Rolls

Place a sheet of nori on a bamboo sushi mat. Wet your hands and grab a handful of sushi rice, spreading it evenly over the nori, leaving about an inch at the top edge. Lay the fish, avocado, and cucumber in a line across the center of the rice.

Roll the Sushi

Using the bamboo mat, roll the sushi tightly away from you, pressing gently to keep the roll firm. Seal the edge of the nori with a bit of water. Slice the roll into bite-sized pieces.

Arrange the sushi rolls on a platter with soy sauce, wasabi, and pickled ginger on the side for dipping.
