Prepare the crust

Preheat your oven to 175°C (350°F). In a medium bowl, combine the graham cracker crumbs, melted unsalted butter, and a pinch of salt. Press this mixture firmly into the bottom of a 9-inch springform pan to form a crust. Bake for about 10 minutes until lightly golden, then remove from the oven and let it cool.

Make the cheesecake filling

In a large mixing bowl, beat the cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually add the granulated sugar and continue mixing until well combined. Add the sour cream, eggs one at a time, vanilla extract, and a pinch of salt. Beat until just combined, being careful not to overmix.

Bake the cheesecake

Pour the cheesecake filling over the cooled crust in the springform pan. Bake in the preheated oven for about 50-60 minutes, or until the edges are set and the center slightly jiggles when you gently shake the pan.

Cool and chill

Turn off the oven, crack the door open, and let the cheesecake cool in the oven for about an hour. Remove from the oven and refrigerate for at least 4 hours, preferably overnight, before serving.

Serve

Once chilled, carefully remove the cheesecake from the springform pan. Slice and serve as is or with your favorite toppings like fruit, chocolate sauce, or whipped cream.
