    Prepare the Cheese

    Slice the fresh mozzarella into triangles, about 1/2 inch thick.

    Make the Goat Cheese Mixture

    In a bowl, mix cranberry goat cheese with salt and black pepper until well combined.

    Bread the Mozzarella

    Spread the goat cheese mixture on one side of each mozzarella triangle. Dip the other side into breadcrumbs, pressing gently to adhere.

    Fry the Triangles

    Heat olive oil in a skillet over medium heat. Add the breaded mozzarella triangles and cook for 2-3 minutes on each side until golden brown.

    Prepare the Sourdough

    Toast the sourdough slices in the same skillet until crisp.

    Serve

    Plate the mozzarella triangles with arugula, toasted sourdough, melba, and a drizzle of balsamic aioli. Garnish with fresh basil.
