    Prepare the ingredients

    Wash the spinach thoroughly and chop it coarsely. Dice the tomato and onion. Crumble the goat cheese into small pieces.

    Cook the vegetables

    In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes. Add the chopped spinach and diced tomato, cooking until the spinach wilts, about 2-3 minutes.

    Mix the eggs

    In a bowl, beat the eggs with salt and pepper until well combined.

    Combine and cook the omelette

    Pour the beaten eggs over the sautéed vegetables in the skillet. Allow it to cook undisturbed for about 3-4 minutes, or until the edges start to set.

    Add goat cheese and finish cooking

    Sprinkle the crumbled goat cheese over one half of the omelette. Once the bottom is cooked and the top is slightly runny, fold the omelette in half and let it cook for another minute until the cheese melts.
