    Cook the Potatoes

    Peel and dice the Russet potatoes into small cubes. In a large skillet, heat olive oil over medium heat. Add the diced potatoes, salt, black pepper, and paprika. Cook until the potatoes are golden brown and crispy, about 15-20 minutes. Stir occasionally.

    Add Peppers and Onions

    Once the potatoes are nearly done, add the diced onion and bell pepper to the skillet. Sauté for an additional 5-7 minutes until the vegetables are tender.

Poached Eggs

    Prepare the Water

    In a large saucepan, bring water to a gentle simmer and add vinegar.

    Poach the Eggs

    Crack each egg into a small bowl, then gently slide the eggs into the simmering water. Cook for about 3-4 minutes for soft poached eggs. Remove with a slotted spoon and let drain.

Assemble the Bowl

    Combine Ingredients

    In a large bowl, place a generous serving of the home fries. Top with your choice of fried chicken, grilled chicken, or bacon.

    Place the poached eggs on top of the protein.

    Prepare Hollandaise Sauce

    In a mixing bowl, whisk together the egg yolks and lemon juice. Slowly drizzle in the melted butter while whisking continuously until the sauce is thickened. Season with salt to taste.
