    Boil the Eggs

    Place the eggs in a saucepan and cover them with cold water. Bring to a boil over medium heat. Once boiling, cover the saucepan, remove it from the heat, and let it sit for 12 minutes.

    Cool and Peel

    After 12 minutes, transfer the eggs to a bowl of ice water to cool for about 5 minutes. Once cooled, gently tap the eggs on a hard surface and peel the shells.

    Prepare the Filling

    Slice the peeled eggs in half lengthwise. Remove the yolks and place them in a mixing bowl. Mash the yolks with a fork, then add mayonnaise, Dijon mustard, white vinegar, salt, and black pepper. Mix until smooth.

    Fill the Egg Whites

    Spoon or pipe the yolk mixture back into the egg white halves.

    Garnish and Serve

    Sprinkle the filled eggs with paprika and garnish with chopped chives or parsley if desired. Serve immediately or refrigerate until ready to serve.
