    Prepare the crust

    Preheat the oven to 350°F (175°C). In a bowl, mix the graham cracker crumbs and melted unsalted butter until combined. Press the mixture into the bottom of a 9-inch springform pan to form an even crust. Bake for 10 minutes, then remove from the oven and let cool.

    In a large mixing bowl, beat the cream cheese and granulated sugar until smooth. Add the sour cream and vanilla extract, mixing until well combined. Add the eggs one at a time, mixing on low speed just until incorporated. Do not overmix.

    Pour the cream cheese mixture over the cooled crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.

    Remove the cheesecake from the oven and allow it to cool to room temperature. Once cooled, sprinkle powdered sugar on top if desired, cover with plastic wrap, and refrigerate for at least 4 hours or overnight before serving.
