    Prepare the Broccolini

    Bring a pot of salted water to a boil and blanch the broccolini for 2-3 minutes until vibrant green. Drain and immediately place in ice water to stop the cooking process. Drain again and set aside.

    Sauté the Garlic

    In a large skillet, heat a tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

    Deglaze with White Wine

    Pour in the white wine and allow it to simmer for 2-3 minutes, scraping any bits off the bottom of the skillet.

    Add Broccolini

    Add the blanched broccolini to the skillet and toss to coat in the garlic and wine mixture. Cook for an additional 2-3 minutes until heated through.

    Add Cheeses

    Stir in the grated Parmigiano Reggiano and torn mozzarella until melted and creamy. Season with salt and pepper to taste.

    Serve

    Serve the broccolini hot, garnished with fresh basil and spicy pickles on the side. Accompany with slices of crusty bread.
