Method

Cooking Directions

  1. 1

    Prepare the Porcini Mushrooms

Soak the dried porcini mushrooms in hot water for about 20 minutes until rehydrated. Drain and chop finely, reserving the soaking liquid.

  2. 2

    Cook the Gnocchi

Bring a large pot of salted water to a boil. Add the potato gnocchi and cook according to package instructions until they float to the surface. Drain and set aside.

  3. 3

    Sauté the Fresh Mushrooms

In a large skillet, melt the unsalted butter over medium heat. Add the local seacoast farm mushrooms and sauté for about 5-7 minutes until golden brown. Add the chopped porcini mushrooms and sauté for an additional 2 minutes.

  4. 4

    Make the Brown Butter Sauce

Continue to cook the butter until it starts to brown slightly, then add in the reserved porcini soaking liquid. Stir well to combine and let it simmer for another 3-4 minutes.

  5. 5

    Combine Gnocchi with Sauce

Add the cooked gnocchi to the skillet and toss gently to coat them in the brown butter sauce. Grate the black truffle over the gnocchi and season with salt and black pepper to taste.

  6. 6

    Serve

Plate the gnocchi and sprinkle with freshly grated Parmigiano Reggiano and chopped parsley before serving.
