Instructions

  1. 1

    Preparation of Potatoes

Wash and peel the potatoes. Use a mandoline slicer to cut them into very thin slices, about 1/16 inch thick.

  2. 2

    Soaking the Potatoes

Place the potato slices in a large bowl and cover them with water. Add the white vinegar and let them soak for at least 30 minutes to enhance the flavor.

  3. 3

    Drying the Potatoes

After soaking, drain the potato slices and pat them dry with paper towels to remove excess moisture.

  4. 4

    Heating the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

  5. 5

    Frying the Crisps

Carefully add a handful of potato slices to the hot oil, ensuring not to overcrowd the pot. Fry until golden brown and crispy, about 2-3 minutes. Remove with a slotted spoon and place on a paper towel-lined plate.

  6. 6

    Seasoning

While the crisps are still warm, sprinkle them with salt and black pepper to taste.

  7. 7

    Serving

Serve the salt & vinegar crisps warm or at room temperature in a bowl or on a platter.
