Prepare the Chicken

In a large bowl, combine jerk spice blend, olive oil, and honey. Add chicken thighs, mixing well to coat. Marinate for at least 30 minutes or up to overnight in the refrigerator.

Make the Slaw

In another bowl, combine shredded cabbage, carrot, and red onion. In a small bowl, whisk together apple cider vinegar, olive oil, salt, and pepper. Pour over the slaw and toss to combine. Let it sit for at least 15 minutes.

Prepare Aji Verde Sauce

In a blender, combine cilantro, serrano pepper, garlic, lime juice, and olive oil. Blend until smooth. Taste and adjust salt as needed.

Grill the Chicken

Preheat the grill to medium-high heat. Grill the marinated chicken thighs for about 6-7 minutes on each side, or until cooked through and juices run clear. Remove from the grill and let rest.

Assemble the Wraps

Slice the grilled chicken and place on whole wheat wraps. Top with the slaw and drizzle with aji verde sauce. Roll up the wraps and serve immediately.
