    Soak the Beans

    In a large bowl, place the dried navy beans and cover them with 6 cups of water. Allow them to soak overnight or for at least 8 hours.

    Drain and Rinse

    After soaking, drain the beans and rinse them under cold water to remove any debris.

Cooking

    Cook Beans

    In a large pot, add the soaked beans and cover them with fresh water. Bring to a boil, then reduce the heat and simmer for about 30 minutes, or until the beans are tender. Drain and set aside.

    Prepare the Sauce

    In the same pot, cook the diced bacon over medium heat until crispy. Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute.

    Add the tomato paste, brown sugar, molasses, Dijon mustard, cider vinegar, salt, black pepper, thyme, and bay leaf to the pot. Stir well to combine.

    Preheat the oven to 350°F (175°C). Transfer the mixture to a baking dish and cover it with aluminum foil. Bake for 1 hour. Remove the foil and bake for an additional 30 minutes, or until the top is bubbly and caramelized.
